Smoked Gouda Primavera

Ingredients

8 oz. whole wheat penne pasta 

2 T. olive oil        

1 small zucchini, diced   

½ c. green/red or yellow pepper, sliced

1 carrot, grated

4 oz. mushrooms, slice

1 small onion, diced 

1 t. minced garlic 

14.5 oz. can diced tomatoes

1 c. chicken broth

1 T. parsley

½ t. basil, and oregano 

½ c. smoked gouda, grated                                     

¼ c. parmesan cheese

 

Instructions

Cook pasta according to directions on the pkg. 

Heat the oil in a skillet over medium heat.  Stir in the vegetables and cook for about 5 minutes. 

 Stir in the tomatoes, chicken broth, and spices.  Bring to a boil, then reduce heat to low and simmer until sauce thickens. 

Stir in pasta and cook until heated through, about 2 minutes.  Stir in the smoked gouda and heat until melted. 

Top with parmesan cheese before serving.
