Smashed Potato Salad   

*Everybody’s favorite.  I use fresh rosemary and basil.

Ingredients

2# red potatoes (5-6 small potatoes)

1/3 c. olive oil

2 T. mayo

1 T. Dijon mustard

¼ c. diced red onions

2 t. rosemary

1 t. salt or as needed

zest and juice from 1 lemon

2 T. basil or dill and parsley

Instructions

     Cut potatoes into cubes and place in a saucepan and cover with water.  Bring to a boil.  Reduce heat; cover and cook for about 15-20 minutes or until tender.  Drain and cool.

     In a large bowl add the rest of the ingredients and whisk.  Add the potatoes and coat with the dressing.  Smash the potatoes with the back of a spoon.  Taste and add salt and pepper as needed.
