Scandinavian Sweet Soup

Ingredients

1# pkg. unpitied prunes

 ¾ c. raisons

 2 cinnamon sticks

 6 c. water

 4 oz. (1cup) dried apricots

 8 ¾ can unsweetened cherries and juice

 3 T. quick cooking tapioca

 ¼ c. sugar

 

 

Instructions

     Place prunes, raisins, cinnamon sticks, and water in a kettle.  Bring to a boil, reduce heat and simmer about 30 minutes or until prunes and raisins are soft.

   Add apricots and cook for 10 minutes.  Pour off liquid from cooked fruit into another kettle.  Add juice from cherries to liquid.  Then add tapioca and sugar.  Cook over medium heat until tapioca is clear, juice should be thick.  This will take about 30 minutes. 

  Add thickened juice and cherries to fruit.  *Optional: add slices of oranges and lemons to the mixture for color.
