Potato Pancakes

Ingredients

3c. frozen shredded hash browns or 4 large potatoes, grated

½ onion, grated

2 eggs, beaten   

1 t. salt          

1 t. pepper           

¼ t. baking powder   

2 T. flour   

2 t. chives 

2 t. parsley

½ c. oil

Instructions

     Drain all moisture from potatoes.  In a large bowl place, the drained potatoes and add all ingredients except oil; mix well. 

     Heat oil in a large skillet over medium heat.  Drop batter by 1/3 cup, into oil, fry until golden brown on both sides.  Drain on paper towels.
