Ingredients

1 box manicotti noodles

2 c. mozzarella cheese (for the top of the manicotti)

1 jar spaghetti sauce or homemade spaghetti sauce

 

Cheese filling:

15 oz. ricotta cheese

1 egg

1 c. parmesan cheese

2 c. Italian cheese blend

1 T. parsley

Instructions

     

     Cook pasta according to package directions, drain and allow to cool. 

     In a separate bowl, mix the ricotta, parmesan, Italian cheese, parsley, and egg together until thoroughly mixed. 

     Using a butter knife or spoon, begin to stuff each pasta shell with the cheese mixture.  Any leftover cheese filling place on top of pasta shells. 

     In a large baking pan, spread a layer of sauce that completely covers the bottom of the pan.  Align the stuff shells in the pan on top of the sauce.  Use remaining sauce to completely cover the pasta.  Use as much or as little as desired of the mozzarella cheese to cover. 

     Bake at 350 degrees until cheese bubbles, about 30 minutes.
