Italian Wedding Soup

Ingredients

Soup

½# Italian sausage

1 small onion, diced

1 t. minced garlic 

1 T. Italian seasoning

1 t. red pepper flakes

¾ c. white or red wine

4 c. chicken or beef broth (2 cans)

1 can diced tomatoes

3 c. fresh spinach, torn

 

Parmesan Croutons: 

3 c. baguette, cubed

½ c. parmesan cheese

2 T. olive oil

 

 

Instructions

     Toast bread cubes in 2 T. oil over medium heat until crunchy.   Place in a bowl and toss with parmesan cheese: set aside.

Sauté sausage until browned.  Add onions, garlic, and seasonings.  Cook until vegetables are tender.       

Deglaze  with wine and reduce until almost evaporated.  Add broth and diced tomatoes.  Bring to a boil, reduce heat, and simmer for about 10 minutes. 

Stir in spinach, allowing it to wilt.  Serve with parmesan croutons.
