4 chicken breasts
Dijon mustard
½ c. olive oil
¼ c. lemon juice
½ t. thyme
½ t. lemon pepper
2 T. chopped parsley
Lightly coat chicken with mustard and place in a shallow pan.
In a separate bowl, combine remaining ingredients and pour over chicken. Cover and refrigerate for 4 hours or more, turning occasionally.
Remove from marinade and grill about 8 minutes per side.
Boil the marinade down for sauce and pour over chicken before serving.
