Grandma Henriksen’s Banana Bread

Ingredients

½ c. shortening       

1 c. sugar

2 eggs, separated

2-3 mashed bananas

2 c. flour      

1 t. baking powder

1 t. baking soda

½ t. salt

½ c. cold water

 

*optional: chopped nuts

 

Instructions

     Cream shortening.  Gradually add sugar, and egg yolks until creamy.  Add the bananas and mix. 

     Sift together the dry ingredients.  Alternate the dry ingredients with ½ cup cold water into the creamed mixture and mix.  Add chopped nuts if desired.

     Beat the 2 egg whites until stiff and fold into the mixture.  Place in greased pans.

     Makes 2 small loaves.  Bake at 325 degrees for 45-60 minutes.
