German Potato Salad

*The only kitchen accident I have ever had was a 2nd degree burn on my arm. I burned the arm from the bacon, corn starch mixture.  I still have the scar today.

Ingredients

5# red potatoes (10-12 small potatoes)

8 slices bacon

3 T. cornstarch

6 T. sugar

1 t. salt

¼ c. red or balsamic vinegar

1 t. minced garlic

1 t. chives

Instructions

      Boil potatoes whole until just fork-tender.  Remove peeling. 

     Fry bacon and set aside.  Add cornstarch to the bacon drippings and cook until thick.  Add sugar, salt, vinegar, and water.  Taste vinegar mixture and add sugar or vinegar to your taste. 

     Slice potatoes and add to the vinegar mixture.  Crumble bacon and add potatoes. 

     Heat thoroughly and serve.
