1 zucchini, shredded
½ c. oil
1 c. sugar
2 eggs
2 t. vanilla
½ t. baking soda
½ t. salt
½ t. cinnamon
¼ t. baking powder
1 ½ c. flour
Lemon glaze:
½ c. powdered sugar
¼ c. lemon juice
Bread: Shred zucchini and set aside. Cream all ingredients except flour and shredded zucchini. Stir in flour by hand until blended; add zucchini. Pour batter into a greased 9×5” loaf pan.
Bake at 350 degrees for 50-60 minutes or until done and springs back in the center.
Glaze: Mix sugar and lemon juice together. Poke holes into slightly cooled bread and pour sugar/lemon mixture over bread.
