¼ c. oil
1 onion, chopped
1 carrot, grated or sliced
½ c. celery, chopped
¼ c. yellow/orange pepper
1 t. minced garlic
1t. chili paste
¼ c. soy sauce
1 t. season salt
1 egg – optional
1 c. rice
2 c. water
Make rice: place 1 cup of rice and 2 cups of water in a saucepan. Bring to a boil then turn the burner to low. Cook for 20 minutes or until water is absorbed. Let cool.
Heat oil in a large skillet and sauté vegetables until tender. Add rice, soy sauce, garlic and season salt. Heat through.
Whisk an egg in a small bowl. Pour the egg into the rice mixture as you stir. When the egg is cooked, rice is ready – optional.
