Cranberry spinach salad

     I caramelize the almonds with ¼ c. sugar.  Use a saucepan and cook while stirring, until caramelized. 

     To save time, I have prepared this salad with store brand dressing.

16 oz. baby spinach

1 c. sliced almonds, toasted or carmelized

1 c. dried cranberries

 

Sesame Seed dressing

¼ c. white wine vinegar

2 T. apple cider vinegar

3 T. sugar

½ c. olive oil

3 T. honey

2 T. sesame seeds, toasted

1 T. poppy seeds

Instructions

Salad: add spinach, almonds, and cranberries to a salad bowl.  Drizzle dressing over salad and toss.  Serve after adding dressing. 

 

Dressing: in a bowl, whisk together both vinegars, and sugar until the sugar has dissolved.  Stir in olive oil, honey, sesame seeds and poppy seeds until blended.
