Cranberry Muffins

Ingredients

Batter                       

1 ½ c. flour       

½ c. sugar

2 t. baking powder

1 t. cinnamon         

¼ t. allspice

½ t. salt

2 eggs, beaten

½ c. milk

¼ c. oil

1 c. cranberries, halved

Topping

½ c. flour

1/3 c. brown sugar

1 t. cinnamon

¼ c. butter, melted

 

Instructions

     Heat oven to 400 degrees.  Line muffin pan with paper baking cups or grease bottoms.

     Beat eggs with a fork.  Stir in milk and oil.  Blend dry ingredients, add to egg mixture.  Stir just until flour is moistened, adding halved cranberries with the last 5-6 strokes.  Fill muffin pan 2/3 full. 

     Prepare topping:  Mix melted butter, flour, brown sugar, and cinnamon until crumbly.  Sprinkle over muffins.

Bake 20-25 minutes or until golden brown.  Remove from pan.  Makes 12 muffins.
