Christmas Prime Rib

Ingredients

Prime rib or Whole Tender Loin

fresh Rosemary

steak seasoning

salt and pepper

  

Instructions

     Prime Rib: rub salt, pepper, and steak seasoning on roast.  Cover with fresh rosemary.

     Preheat 475 degrees.  Place Prime Rib in a 475-degree oven for 15- 20 minutes.  Turn down to 250-300 degrees for about 3 hours, (about 20 minutes per pound).     

     Let the roast sit for 15 minutes with tinfoil over the top.  Carve the roast.

     *Very center 127 degrees (do not overcook)

     *20 minutes per pound

 

     Whole Tenderloin: fold the thinner end underneath the loin, about 1/3 of the roast.  Tie it with butcher twine so that there is an even thickness.  

     Season and cook the roast the same as Prime Rib.
