Chocolte Toffee Cookies

Ingredients

½ c. softened butter

½ c. white sugar

½ c. brown sugar

1 egg

1 t. vanilla

1 c. flour

½ c. cocoa powder

1 t. baking soda

½ t. salt

1 T. milk

½ c. English toffee bits

Sea salt for garnish

 

Instructions

     In a large mixing bowl, cream the butter and sugars with an electric mixer until fluffy.  Add egg and vanilla, then blend again until combined.

     In a sperate bowl add the flour, cocoa powder, baking soda, and salt.  Gradually add the dry ingredients to the wet ingredients and mix by hand, until combined.

     Stir in 1 tablespoon of milk and ¼ c. of toffee bits.  If the dough is too thick, add another tablespoon of milk.

     Cover and chill the dough for 2-3 hours (or overnight) to allow favors to meld.

     Preheat oven to 350 degrees.  Scoop the dough into 2-3 tablespoon sized balls and place on cookie sheet leaving 3 inches between each cookie.  Press the cookies down and sprinkle with the remaining toffee bits and Sea salt.

     Bake for about 12 minutes or until the edges are set and the centers are slightly soft.  Remove from the oven and let cool for 1-2 minutes before removing from the cookie sheet.

 

Serve and enjoy.
