Captain Ken’s Baked Beans

Ingredients

Scale

1½ # dry navy beans (small bag)

1 c. diced ham and/or ham bone (I use both)

½ c. chopped onion

½ c. brown sugar

½ c. ketchup 

½ c. molasses

1 t. season salt

1 t. dry mustard

 2 t. hot sauce

2 T. Worcestershire sauce

Instructions

Completely soften the beans.  Soften the beans by soaking them in 6 cups water, and simmer for 30 minutes.  Let stand in the water covered for 1½ hours.  Drain and reserve 1 cup of water.

Put beans in a crock pot.  Add all remaining ingredients along with 1 cup reserved bean liquid; mix well.  Cover and cook on low 8-10 hours or high 4-5 hours, stirring occasionally. 

Cut ham from the bone and return to crock pot.  If thicker beans are desired, uncover and turn on high during the last hour.
