Butterscotch Pie
Lindsay’s 1st attempt at Grandma’s Butterscotch Pie.

Ingredients

9” baked pie shell (my mom always makes a lard pie crust).
¼ c. plus 2 T. flour
dash of salt
1 1/3 c. brown sugar
2 c. hot milk
½ c. butter
3 egg yolk, beaten
1 t. vanilla
Instructions
Mix flour, salt and sugar in upper section of a double boiler, (or use a heavy-duty saucepan and constantly stir). Add hot milk slowly and add the butter. Cook until it thickens.
Pour slowly over beaten yolks, stirring constantly. Return to saucepan and cook for 2 minutes. Add vanilla. Cool. Pour into baked pie shell.
Beat 3 egg whites until stiff. Add 5 T. sugar gradually and beat well. Pile on top.
Bake at 325 degrees for 15 minutes.
