Bonnie’s Banana Bread

*This is not Grandma Henriksen’s recipe, but the one I use.

Ingredients

2 very ripe bananas

¾ c. sugar

½ c. butter

2 eggs

¼ c. milk

2 t. lemon juice

1 ½ c. flour

1 t. baking soda

½ t. salt

Instructions

     Mash bananas and set aside.  Cream sugar and margarine in a mixing bowl.  Mix eggs into sugar mixture, one at a time.  Add milk, lemon juice and mashed bananas and mix.  

     Stir by hand, add the salt, baking soda and flour into the sugar mixture.  Do not over stir as the bread will be coarse.  Turn into a greased 9×5” loaf pan. 

     Bake at 350 degrees for 55-60 minutes.  Bread should spring back when touched lightly in the center.  Cool before removing from the pan.
