Beef Jerky

*Nate’s recipe.  He makes great Jerky.

Ingredients

Scale

3-5# lean beef

½ c. soy sauce plus ¼ c. Worcestershire sauce (this will vary, it will depend on the amount of meat you smoke), just have 2 to 1- soy to Worcestershire sauce

2 T. brown sugar

black pepper to taste

red pepper flakes to taste

1 ½ T. onion powder

1 ½ T. garlic powder

Instructions

 

     Slice the meat thin.  I use a meat slicer. 

     Mix all ingredients, beside the meat, in a large bowl.  Add some water to the bowl and add the meat. 

     Marinate the meat in the refrigerator for at least 6 hours.

     Smoke the beef in a smoker until the meat slices have dried out.  This will take about 3-5 hours; this will depend on the type of smoker.  Check and rotate them every half hour for even cooking.  If cooking in the oven or dehydrator, add a couple drops of liquid smoke to the brine.

     Store the jerky in Ziplok baggies and refrigerate.
