Tator Tot/Hashbrown Egg Casserole

Ingredients

½ # bacon or breakfast/Italian sausage

½ c. chopped onion

½ c. red or yellow pepper, diced  

1 dozen eggs        

½ c. milk

1 pkg. frozen hashbrowns, or tator tots, thawed

1 c. cheese, shredded

1 t. salt and pepper

½ t. dill weed, onion and garlic powder

Instructions

     Cook bacon or sausage until crisp, crumble and set aside. 

     Sauté onions and peppers in the bacon drippings until tender. 

     Beat eggs and milk in a large bowl.  Stir in hash browns, cheese, salt, pepper, seasonings, onion, red or yellow peppers and bacon.  Transfer to a greased 9×13” pan.

     Bake uncovered at 350 degrees for 35-40 minutes or until a knife inserted comes out clean.
