Apple Pie Eggroll

Ingredients

2 T. butter

3 c. apples, peeled, cored and diced

¼ c. brown sugar

½ t. cinnamon

10-12 eggroll wrappers

oil for frying

powdered sugar for dusting

caramel sauce, optional

 

Instructions

     In a medium pan, melt butter, add apples, brown sugar, and cinnamon.  Cook over medium-high heat, stirring often until apples are tender.  Pour into a bowl and place in the refrigerator to cool for 30 minutes.

     Place 2 heaping spoonful of apple filling into each eggroll wrapper, wet edges with water, roll up sealing edges. 

     Fry: Preheat oil to 350 degrees and cook for 4-5 minutes or until browned and crispy.  Remove to paper lined plate, sprinkle with powdered sugar and serve with caramel sauce.
