Apple Fritters

Ingredients

2 apples, peeled, and cored, and cut into ¼ inch pieces

2 c. flour

1/3 c. sugar

1 T. baking powder

1 t. salt

1 t. cinnamon

¼ t. nutmeg

¾ c. apple cider   

2 eggs, lightly beaten

2 T. butter, melted

3 c. vegetable oil

 

Glaze

2 c. powdered sugar        

¼ c. apple cider

½ t. cinnamon

¼ t. nutmeg

 

 

Instructions

     Spread prepared apples in single layer on paper towel lined baking sheet and pat thoroughly dry. 

     Combine flour, sugar, baking powder, salt, cinnamon, and nutmeg in a large bowl. Whisk cider, eggs and melted butter in a medium bowl until combined.  Stir apples into flour mixture, stir in cider mixture.

      Heat oil in an electric frying pan and heat to 350 degrees.  Add 1/3 cup of batter to the hot oil, around 5 fritters at a time.  Press batter lightly with the back of a spoon to flatten.  Fry until golden brown, 2-3 per side.           Transfer fritters to a wire rack.  Bring oil back to 350 degrees and repeat with remaining batter.  Let fritters cool for 5 minutes.

     Meanwhile, whisk powdered sugar, cider, cinnamon, and nutmeg in medium bowl until smooth.  Top each fritter with 1 heaping spoonful of glaze.
