Apple Brie Quesadillas

I used Red Pepper Hummus wraps, purple onion, and double creme brie.

Apple Brie Quesadillas

Ingredients

1 onion, sliced

¼ c. balsamic vinegar

¼ t. sugar

¼ t. dried thyme

¼ t. dried rosemary, crushed

2 T. butter

2 tart apples, thinly sliced

8 oz. brie cheese, rind removed, sliced   

4 flour tortillas, bread, or flat bread can also be used

 

Instructions

   

      In a skillet over medium heat, cook the onions, vinegar, sugar, thyme, and rosemary in butter for 10 minutes or until onions are golden brown. 

     Spoon the mixture over half of each tortilla, top with sliced apples and cheese. Fold over. 

     Cook on a griddle over medium heat for 2-3 minutes on each side or until cheese is melted.
