I have demonstrated Apple Pie making in my Creative Meal classes for 30 years.
After I bake them, I deliver them to teacher lounges and the front offices. I have become known at school as the best pie maker. I never make them at home as I do not
like apple pie.
6 apples
¾ c. sugar
2 T. cornstarch
1 t. cinnamon
1 T. butter
Peel, core, and slice apples: toss with sugar mixture. Pour into pastry shell. Dot with butter. Cover with top crust. Seal and flute edges.
Bake at 400 degrees for 30-35 minutes.
Never Fail Egg Pastry
2/3 c. Shortening
2 c. flour
1 t. salt
1 well beaten egg
¼ c. plus 1 T. cold water
1 t. vinegar
Cut shortening into flour and salt mixture until it resembles corn meal or the size of small peas.
Combine beaten egg, water, vinegar and add all at once to the flour mixture. Stir with a fork until blended. Do not over stir. The mixture should be crumbly, press together to form a ball. Let stand for 5 minutes.
Split into 2 pieces. Roll on floured counter to 1/8” thick. Bake double –crust pie for 30 -35 minutes.
