Alfredo’s Fettuccine

Ingredients

¼ c. butter

1 c. half & half or heavy cream

2/3 c. freshly grated parmesan cheese

12 oz. fresh fettuccine or cheese ravioli

1 t. red pepper flakes – optional

1-2 t. minced garlic

1 T. parsley

optional:  mushrooms, asparagus, red pepper, onions, crab, shrimp

Instructions

     Melt the butter in a large pan.  Add the cream and bring it to a boil.  

     Simmer for 2-3 minutes, stirring, then add the parmesan cheese, with salt, pepper and red pepper flakes, garlic to taste, and turn off the heat under the pan.

     Bring a large pan of lightly salted water to a boil.  Drop in the pasta and cook as directed on the package. 

     Turn the heat under the pan of cream to low, add the pasta all at once and toss until it is coated in the sauce.  Taste for seasoning.      

     Serve immediately, with extra parmesan cheese.
