Thai Shrimp Soup

Ingredients

2 bundles rice noodles uncooked and broken

2 T. butter

1# medium uncooked shrimp

salt and pepper

2 t. minced garlic

1 onion, diced

red pepper, diced       

2 T. fresh grated ginger

2 T. red curry paste 

24 oz. unsweetened coconut milk

4 c. chicken broth

juice of lime

2 T. cilantro, chopped

Instructions

       Sauté shrimp with salt & pepper, in 2 T. butter for 2-3 minutes.  Set aside. 

     Add garlic, onions, and peppers to butter and cook 3-4 minutes.  Add ginger, red curry and red chili paste, cook for 1 minute. 

      Whisk in coconut milk and chicken broth.  Cook 1-2 minutes.  Bring to a boil and add rice noodles, reduce heat and simmer for 8-10 minutes. 

     Stir in shrimp, lime juice and cilantro.
