Gelatin Cake or ‘Cool Summer Lemon Cake’

     Grandma had submitted this recipe for 2 different cookbooks; one was for her church and the other for the ‘Food Iowa Cooks’ Cookbook.  I felt she must have thought highly of this recipe, even though I do not remember her making this cake.  I tried the recipe, and it is very good.  I do think the name needs to be changed from Gelatin Cake to…  ‘Cool Summer Lemon Cake’.

Ingredients

Scale

Cake

4 eggs                 

¾ c. cold water

1 pkg. lemon gelatin

1 lemon Velvet cake mix 

¾ c. oil  

 

Glaze

2 c. powdered sugar

5 T. lemon juice

Instructions

     Mix for 1 minute the 4 eggs, ¾ cup cold water and 1 pkg. lemon gelatin.  Add 1 pkg. lemon cake mix and beat for 2 minutes.  Add ¾ c. oil and beat for 1 minute.     Pour into greased 9×13” pan. 

     Bake 40 minutes in 350 degrees oven.  When removed from oven prick with fork about 2” apart all over top of cake.  Immediately cover with glaze of 2 cups powdered sugar and 5 T. lemon juice which has been beaten together with mixer. 

     Spread over warm cake.
