Turkey Noodle Soup

     This recipe is good for leftover turkey and chicken.

Ingredients

8 oz. egg noodles

1 c. cooked turkey, diced

3-4 c. chicken broth

1 c. water

½ c. carrots, sliced

½ c. celery, chopped

½ c. onion, chopped

1 t. thyme

1 t. parsley

salt & pepper to taste

 

Instructions

     In a large saucepan, sauté carrots, celery, and onions in a small amount of butter until tender.  Add broth and water to the vegetables and bring to a boil. 

     Add uncooked noodles and spices and reduce heat.  Simmer for 20-30 minutes.
