Baked Dijon Salmon

Ingredients

4 T. butter, melted

3 T. Dijon mustard

1 ½ T. honey

¼ c. plain dried breadcrumbs          

¼ c. pecans, finely chopped

2 t. parsley

4 (4 oz.) salmon fillets

1 lemon, cut into wedges

Instructions

     Preheat oven to 400 degrees.  Stir together butter, mustard, and honey in a bowl.  In another bowl, combine breadcrumbs, pecans, and parsley. 

     Brush each fillet lightly with mustard mixture.  Sprinkle bread crumb mixture on fillets.

     Bake until salmon flakes easily with a fork, 12-15 minutes.  Season with salt and pepper, and garnish with lemon wedges.
