¼ c. peanut butter
¼ c. coconut milk
2 T. soy sauce
2 T. honey
1 T. lime juice
½ t. fresh ginger
½ t. minced garlic
¼ t. crushed red flakes
In a microwaveable-safe bowl, stir together ingredients. Microwave on high for 1 ½ minutes, or until hot, stirring every 30 seconds.
Serve warm with egg rolls.
*I did not have coconut milk, so I used 3-4 T. sour cream. Worked fine.
